About Me
About
I am a Meat Scientist with expertise in meat quality, meat safety, food microbiology and post-harvest animal products. Currently serving in the Department of Microbiology, my research integrates microbiological, biochemical and meat science approaches to improve the safety, quality, shelf life and sustainability of animal-derived foods. My work focuses on understanding the interaction between microorganisms and meat quality attributes, including spoilage, foodborne pathogens, antimicrobial resistance, oxidative stability and postmortem muscle biochemistry.
My research interests also encompass meat processing technologies, hazard analysis and food safety systems (HACCP), quality assurance, molecular detection of foodborne pathogens, antimicrobial interventions and meat value chain improvement. I am committed to translating scientific research into practical solutions that enhance public health, food security, and the livestock industry through evidence-based innovations in meat science and microbiology.
